Canadian Beans with Smokey Bacon


This recipe is from Episode 8 of Secret Meat Business

Ingredients

  • 500 gms smoky streaky, bacon
  • 1 clove garlic, crushed and roughly chopped
  • 1 onion, finely diced
  • 1 chilli, roughly chopped
  • Pinch cumin, toasted & ground
  • Pinch coriander, toasted & ground
  • 250 gms diced beef (1 cm dice)
  • 1 cups borlotti beans, par cooked
  • 1 cups butter beans, par cooked
  • 1 cups kidney beans, par cooked (or tined)
  • ½ cup basil leaves, torn
  • 1 fresh bay leaf
  • 3 sprigs thyme
  • 500 mls tomato juice
  • 1 tablespoon tabasco sauce
  • ¼ cup canadian maple syrup
  • ½ cup parsley, roughly chopped

Method

  1. Cut thick slices of bacon into small chunks and add to a hot pan, add the garlic, onion and chilli, cumin and coriander.
  2. Add the beef, basil bay leaf, thyme and season with salt and pepper.
  3. Gently stir for 4 -5 minutes over a medium-high heat.
  4. Add the tomato juice simmer gently for 40 minutes, until the beef is tender.
  5. Then add the beans until cooked. Add the Tabasco, maple syrup and parsley.
  6. Serve with two chunky slices toast, a fried egg and a drizzle of maple syrup (optional).
