Thai-style Satay Beef

A quick, spicy, and full of flavour spin on satay beef :)

Ingredients

  • stir fry

  • 500grams beef rump cut into strips

  • approx 15-20 snow peas

  • 2 medium carrots sliced thinly with peeler

  • 3 cloves garlic finely sliced

  • 1 brown onion chopped

  • 2 red chillies finely sliced

  • 1 bunch spring onions finely sliced

  • half tub of cherry tomatoes halved

  • zest of a lime

  • sauce

  • 3 tblsp crunchy peanut butter

  • 1 tbsp fish sauce

  • 1 tbsp rice wine vinegar

  • 1 tbsp soy sace

  • 2 teaspoons palm sugar

  • juice of half a lime

  • half cup of water

  • 1 cup coconut cream

Method

  • 1.

    1 - Fry onions, chillies, and whites of spring onions on high heat in wok until coloured, add beef and brown, put in a splash of fish and soy sauce, a pinch of salt and a good grind of pepper.

  • 2.

    Add snow peas, carrot,green parts of spring onions, lime zest, and cherry tomatoes and stir fry until ready, leaving some crunch in the veges.

  • 3.

    2 - Place all ingredients for sauce into a small saucepan and bring to boil, check seasoning etc then stir the sauce through the stir fry just before serving.

Notes

Keep some fresh chopped chilli and some green parts of spring onions aside for garnish and a bit of extra heat, and serve with jasmine rice :)
