Pear and walnut syrup brie

Method

  1. Coursely chop the pears, mix with the brandy and leave to macerate for approx 1 hour, turning occasionally. Cut the brie in half to make 2 slices, top the bottom piece with the pears then replace the top. Place on baking tray lined with baking paper and chill. For the syrup, stir the sugar and water in saucepan over medium -high heat for 2 minutes or until sugar dissolves. Simmer without stirring for 5 minutes or until golden brown. Remove from heat and add 1/3 cup of walnuts and pour over immediately over cheese. serve
