Too-Easy Blueberry Muffins


Blueberry muffins that you can make in minutes!

Serves 12

Ingredients

  • 2½ cups (375g) self-raising (self-rising) flour, sifted
  • 1 teaspoon baking powder
  • 1 cup (220g) caster (superfine) sugar
  • ½ cup (125ml) vegetable oil
  • 1 egg
  • ½ cup (125ml) milk
  • 1 teaspoon vanilla extract
  • 300g fresh or frozen blueberries
  • Granulated sugar, for sprinkling

Method

  1. Preheat oven to 180°C (350°F). Place the flour, baking powder and sugar in a bowl. Place the oil, egg, milk and vanilla in a separate bowl and whisk to combine. Pour the liquid ingredients into the dry ingredients and mix until just combined. Add the blueberries and mix to combine. Spoon mixture into a 12-hole ½-cup capacity (125ml) muffin tin lined with paper patty cases. Sprinkle the tops with sugar and bake for 30–35 minutes or until cooked when tested with a skewer. Remove from tin and cool on a wire rack.

    THANK YOU, I just made them and finally the berries did not sink to the bottum and they taste delicious! Dough is verry thick when you mix all the ingredients together, but the result is marvelous!

    I too had to add extra milk as the mixture following the exact measurements became too dry.

    I disagree with the mixing method. The recipe says you should put the sugar in with the flour. In Baking sugar is considered a "wet" ingredient, and should instead be mixed with the milk, oil, and egg.

    I have a doubt, as I live overseas, and I'm not from an anglophone country, is the caster sugar the same than the called icing sugar in the US (it is known in latin american spanish as "azucar glass") or the caster sugar is a middle ground sugar between the granulated and the icing. And if there are differences can I use icing sugar in this recipe? Thanks, I love your recipes!!

      you can make your own caster sugar - just pop it in the blender & let it whizz for a bit (just not till a powdery consistency). I do it all the time. Worst case you could try it with granulated sugar - you never know until you try ;)

      you can not substitute caster sugar because: if you put you put icing sugar or granulated sugar muffins won't turn out to be perfect or even nice once i tried this but my recipe was a disaster due to powdered sugar... :(

      Caster sugar is the middle ground sugar between granulated and icing sugar. I don't know if you can substitute it for icing sugar, prob not.

    I tried this recipe with strawberries. They came out well but the end result was a bit bitter. Any idea why this happens? I used the exact same quantity of the ingredients, just replacing the blueberries with the strawberries but the muffins were slightly bitter. Any ideas about this would be very helpful

    The mixture was very dough like I could hardly mix it with a whisk so I hand mixed it, there still cooking in the oven, hope they come out nice!!!

    I used wholemeal flower and found the mixture too dry so I added more milk. These muffins came out with a beautiful crust, awesome recipe.

    I have made these muffins many times and delicious. I have increased the milk and oil to 2/3 cup each.

      I think very ripe mashed banana would be better Uji - why not just use a banana muffin recipe? I have a banana cake recipe you could use

    This is my favourite muffin recipe. The dough is stiff but when baked you get a moist soft muffin. Easy and tasty.

    Yummy - made a few times now & always a hit. I would add more milk & oil as mixture is doughy but I think that is how it is supposed to be. Enjoy

      I have tried this recipe and it does need more oil and milk otherwise the mixture can not be mixed evenly.

    I added 1/4 cup more milk ( I used buttermilk) and scooped the mixture in - it was stiff like cookie batter. I was pleasantly surprised! They were the best muffins I have ever made. I baked them in a fan forced oven for 20mins.

    Hmm I agree with the above comments, mixture was quite doughy - added quite a bit more milk. I found muffins dry I'm afraid and I cooked for 5 mins less than cooking time...

    I cant seem to find any self-rising flour where I am, is there an alternative? or a conversion using normal all purpose flour and more baking powder??

      1 cup normal flour and 2 teaspoons backing powder are equal to self rising flour

    Did anybody else find that the mixture wasn't very liquid - more doughy? I had to add a bit more milk and I certainly don't think I added all 300g of blueberries. They're in the oven so I'll see how they turn out!

      gracie82, I totally agree, way too much berries for my liking. I only used 250gm, and, yes, it was a very thick batter, I didn't add any extra liquid. Looking forward to the taste test.

    I made these muffins a few weeks ago after seeing the episode on foxtel and buying the book. They are amazing muffins and next time I make them I'm going to use half raspberries and half blueberries. They are so yummy and they didn't last long.

    Such an easy recipe - I watched the program on foxtel before I attempted and this worked a treat, I could just copy exactly what Donna was doing for each step. I only used one bowl as she suggested and also used frozen berries instead of blueberries and they were so yummy - they were eaten very quickly and have now made this recipe 3 times in a month - also made sure I sprinkled the sugar on top before baking, this made a big difference - thank you Donna Hay!

    Just finished making these! It produced some really decent sized, devine-smelling muffins! Substituted Vegetable oil for Extra Virgin Olive oil and I didn't have enough self-raising flour so after I used 1 1/2 cups of self-raising flour, I made up the extra cup with plain flour and an extra 2 tsp of baking powder. Hopefully these taste good! :)

      I've just made apple and cinnamon muffins and i ran out of vegetable oil so substituted it with olive oil turned out just as good.

    I have used the basic muffin mix to make raspberry and choc chip, apple and cinnamon and spiced fruit miffins all worked out fantastic. Also made the whole lemon pudding again easy and fantastic results
