Sounds like you had an air pocket in the batter... Next time you do them when you have poured the batter into the tin tap the tin flat to knock the bubbles out then bake as normal... Hopefully this will work it did for me....

great recipe! for a grown up version I added some raisins soaked in spiced rum overnight, replaced the vanilla with the rum (to taste, of course!). Kids love them with mini M & M's mixed through.

This recipe is what everyone said above and more! Scrumptious and easiest recipe I ever prepared in my entire life!! I made two small changes...instead of caster sugar I used brown sugar and added a bit of cooking chocolate chunks!! I couldnt stop to eat it!! ;-))
I have made these twice now. So quick and easy and made with ingredients that we always have handy. Put a couple of tablespoons of white choc chips in the 2nd batch at the kids request. Will be a regular treat at our place.
I made these brownies on the weekend with GF flour ( Orgran) and they were delicious. They were really fudgy and noone could tell they were gluten free.

I replaced half of the castor sugar with splenda and used whole mealflour instead, still devine!!:)

yes i made it with white wings gluten free plain flour and they turned out perfectly :)
