Remove and discard the rind from the bacon. cut into thin strips or little squares.
Heat the oil in a frying pan and cook the bacon over medium heat until crisp and golden brown. remove the bacon and drain on paper towels.
Add the fettucine to a large pot/pan of boiling water and cook until just about tender (around 10 minutes,) drain well into a colander then, return it to the pan.
While the pasta is cooking put the eggs, cream and cheese into a bowl of jug and beat beat together. add the bacon to the mixture.
Pour the sauce over the hot pasta and return to the stove. stir over a very low heat for 1 minute, until the sauce thickens.
Serve immediately with black pepper
use the biggest pan you have for the pasta.
