Chicken with Haloumi and Honey


Donna Hay's fast, fresh, simple chicken recipe is perfect for warm summer evenings...

Serves 2

Ingredients

  • 2 x 200g chicken breast fillets, trimmed
  • 150g haloumi, cut into 4 slices
  • 1 tablespoon shredded lemon zest
  • 6 sprigs lemon thyme
  • 1 tablespoon olive oil
  • 1 tablespoon honey
  • fig and rocket (arugula) salad, to serve

Method

  1. Preheat oven to 180°C (350°F).
  2. Place the chicken, haloumi, zest and lemon thyme in a ceramic baking dish.
  3. Combine the oil and honey and pour over.
  4. Bake for 18–20 minutes or until chicken is cooked through.
  5. Serve with a fig and rocket salad.

    Super easy but super tasty and impressive with complex layered flavours. I sliced red peppers as bed for chicken and loved the colour contrast while peppers were super sweet and whole dish absolutely delish!!

    Absolutely my favourite dinner party main served with a rocket & fig salad as Donna suggests. I've already made it 3 times. What a great combination of flavours, even if it wasn't so quick and easy to prepare & cook, I'd still want to serve this to guests. It is definitely a WOW dish!!

    This was very easy to make. I used a different herb as I could not find any of the lemon thyme, but it still tasted nice.

    Yummy and super easy. I served it with creamy mashed potato (made in my new Thermomix!) - which was lovely for soaking up the lemony/honey sauce. Next time I will definitely serve it with something green as well. Probably will try a little garlic as well. Will make it again and again.
