Fresh salad recipe with barramundi and sauces

Ingredients

  • 2 handfuls raw barramundi 1cm diced

  • 1 finely diced spanish onion

  • 1 cucumber finely diced

  • 2 fresh tomatoes finely diced

  • ¼ cup red wine vinegar

  • 1 tblsp lemon juice

  • 1 tblsp soya sauce

  • 2 cloves crushed garlic

  • 1 tsp sugar

  • 1 sml – med chillie or ½ tsp dried chillie flakes

  • ground sea salt & black pepper to taste

Method

  • 1.

    Dice tomatoes, spanish onion, cucumber into 1cm pieces then add diced barramundi then add rest of ingredients, combine altogether and cover and refigerate overnight
