Celebration Pavlova


Celebration Pavlova

This pav can feed 25 to 30 people. its great for parties

Ingredients

  • 12 egg whites
  • 3 1/2 cups of caster sugar
  • 4teaspoons of vinegar
  • 4 teaspoons of corn flour
  • 2 teaspoons of vanilla extract
  • 300ml of cream (whipped until firm with seeds from a vanilla pod)
  • Mixed fresh berries

Method

  1. Pre-heat oven at 180c
  2. In a large bowl beat egg whites until firm. Gradually add sugar a tablespoon at a time while the mixer is still beating.Beat until all combined, about 10 minutes in all.
  3. Remove from mixer and with a metal spoon fold in the rest of the ingredients making sure that there are no lumps from added corn flour.
  4. Pile mix at least 10cm high on a tray lined with baking paper, allowing a little room on the sides for expansion ( any shape you like).
  5. Place in the oven and bake at 180c for15min, turn down oven to 150c and bake for a futher hour. Turn oven down to 120c and bake for another 30 min.
  6. Switch oven off, leave the door ajar until cold.
  7. When pav is cold, turn onto a large tray gently removing baking paper and top with cream and berries.
  8. Refridgerate until needed.

Notes & Tips

You can dust berries with a little icing sugar to give a heavenly affect. You can use any fruit you wish remembering that banana's, apples etc.. may discolour. If using these fruits, lightly brush with lemon juice.
