Crumbed Baked Potatoes

My mums has been making these potatoes as long as I can remember. They take 5min to put together and not long to cook


  • 4 to5 middle sized Potatoes- skins removed

  • 150g of bread crumbs

  • 50g of grated parmaesan cheese

  • 1/2 cup of finely chopped parsley

  • salt

  • pepper

  • olive oil

  • 1 Large baking tray - you may need more than one depending on the size of your potatoes.

  • baking paper to line tray

  • Pre-heat oven at 200c


  • 1.

    Cut potatoes into 1 cm slices and place them into a bowl. Cover with water leave aside.

  • 2.

    In another bowl place crumbs,cheese and parsley and mix together until combined.

  • 3.

    Leaving the potatoes in the water remove one slice place in bowl with bread crumbs. Crumb and place on tray. Repeat with other slices. Drizzle with oil, salt and pepper to taste.

  • 4.

    Bake for 20 to 30min or until golden and potatoes are cooked when pierced with a skewer.
