Salt Cod with Stinging Nettle, Lamb’s Quarters, & Spring Garlic

Ingredients

  • Wild greens:
  • 1 tbsp olive oil
  • 3 stalks spring garlic, chopped
  • Freshly ground black pepper
  • ½ lb stinging nettles, leaves picked and washed (wear gloves to prevent thorns from stinging)
  • ¼ cup water
  • 1 lb lamb’s quarters, leaves picked and washed
  • salt cod:
  • 1 ½ lbs salt cod, soaked for 48 hours in 3 changes of water
  • 2 tbsp olive oil
  • 1 stalk spring garlic
  • 2 cinnamon sticks
  • 5 sprigs of thyme
  • 1 bay leaf
  • ¼ cup white wine
  • 3 cups milk
