A fruit pie variation healthy enough for breakfast.
Chop the fruit and stew in a saucepan for about 10 mins
Microwave the honey for about 30 secs until very runny.
Mix in honey and oil into muesli.
In a pie dish, spread stewed fruit evenly on bottom.
Pour muesli mixture into centre on top and then spread evenly out to sides.
Sprinkly with almonds.
Bake for 20-25 mins at 180C.
Will keep for up to 2 weeks in the fridge. You can heat it up in small amounts in the microwave. Variations of fruit, adding a bit of sherry, spices, etc, can keep you amused for a long time, without having to change the method.
