Pear, Date and Rhubarb Breakfast Pudding


A fruit pie variation healthy enough for breakfast.

Serves 6 to 8

Ingredients

  • For the bottom fruit filling:
  • 4 pears, 12 dates and 2 sticks of rhubarab
  • For the top crust:
  • 2 cups of muesli
  • 1/4 cup vegetable oil
  • 3/4 cup honey
  • 1/2 cup almonds

Method

  1. Chop the fruit and stew in a saucepan for about 10 mins
  2. Microwave the honey for about 30 secs until very runny.
  3. Mix in honey and oil into muesli.
  4. In a pie dish, spread stewed fruit evenly on bottom.
  5. Pour muesli mixture into centre on top and then spread evenly out to sides.
  6. sprinkly with almonds.
  7. Bake for 20-25 mins at 180C.

Notes & Tips

Will keep for up to 2 weeks in the fridge. You can heat it up in small amounts in the microwave. Variations of fruit, adding a bit of sherry, spices, etc, can keep you amused for a long time, without having to change the method.
