Has garnered compliments from a friend's mother! Pressure cooked, this recipe is quite fast and not hard to prepare. Lamb shanks are inexpensive and this is a variation on a pot stew I saw a Brazillian woman make, but with a Morrocan twist.
Lightly brown the onion, garlic and carrots in oil in pressure cooker.
Add in the rest of the ingredients*, stir to distribute evenly and pressure cook for about 30-40 minutes.
Good with mash potatoes, mashed sweet potatoes, mashed pumpkin, cous cous, over brown rice, or even wholewheat pasta spirals.
*You can also add 2 large potatoes in with the original ingredients into the pressure cooker instead, for convenience.
Mixing legumes and pulses with meat ( eg. lentils with lamb) is a good way to add vegetable protein to your diet and also cuts down on food bills.
