Mandorlati - Almond Biscuits

Some people call these little biscuits Amaretti, but they're not as dry and crispy as Amaretti. These biscuits are almost marzipan like. They make fantastic Christmas biscuits bacuase they're pretty and so yummy.


  • 4 large Egg Whites

  • 500g Almond Meal

  • 1 3/4 cups caster Sugar

  • 2 tsp Baking Powder

  • 1/4 tsp Almond Essence

  • 1 cup Icing Sugar

  • Glace Cherries or Flaked Almonds to decorate


  • 1.

    Preheat oven to 170 C

  • 2.

    Line cookie sheets with baking paper.

  • 3.

    In a large bowl, combine almonds, caster sugar, baking powder and almond essence.

  • 4.

    In a smaller bowl, whish the egg whites with a for or balloon whisk til foamy.

  • 5.

    Add to dry mix gradually, stirring minimally otherwise dough will toughen.

  • 6.

    Using your fingers, make sure everything is combined.

  • 7.

    Roll 1 Tablespoon of dough into a ball, roll in icing sugar and put on cookie sheet.

  • 8.

    Either press half a glace cherry in the centres or push some flaked almonds into the tops.

  • 9.

    Bake for 15 mins til lightly coloured.

  • 10.

    Don't overbake or they will start to dry out.
