Seared Parcels of Salmon wrapped in Prosciutto served on Fresh Green Mixed Leaf & Red Fruit Salad with a Warm Honey Soy Balsamic Vinaigrette

  • Seared Parcels of Salmon wrapped in Prosciutto:

  • 2 salmon fillets

  • 6-8 strips of Prosciutto

  • Toothpicks

  • Fresh Green Mixed Leaf & Red Fruit Salad:

  • Green salad leaf mix (include spinach)

  • Watermelon

  • Strawberries

  • Tomatoes

  • Warm Honey Soy Balsamic Vinaigrette:

  • ½ cup of honey

  • 2 tbsp of soy sauce

  • 2 tbsp of balsamic vinegar

  • Salt


  • Seared Parcels of Salmon wrapped in Prosciutto::

  • 1.

    Slice 2cm wide strips off the length of your salmon fillets.

  • 2.

    Wrap the salmon strips in prosciutto and secure with toothpicks.

  • 3.

    Cook in medium hot frypan for approximately 2 – 3 min each side until prosciutto is crispy. Remove toothpicks before turning.

  • Fresh Green Mixed Leaf & Red Fruit Salad::

  • 1.

    Dice the tomatoes, strawberries and watermelon into small portions.

  • 2.

    Combine with your green leaf salad mix and arrange in a heaped pile on the centre of your plate.

  • Warm Honey Soy Balsamic Vinaigrette::

  • 1.

    Over a low heat combine the honey, soy sauce and balsamic vinegar for approx 1 minute.

  • 2.

    Take off the heat, add salt, stir and let rest.
