Lachlan's Dessert, Series 3, Come Dine with Me Australia.
Preheat the oven to 100C.
Use electric beaters to whisk the egg whites until the egg whites can hold shape to form a peak.
Gradually add 270g of the sugar and whisk in the vinegar, vanilla and cornflour.
Draw six 10cm circles on a piece of non-stick baking paper and place on a baking tray.
Mound the mixture into the circles and bake for 25 minutes.
Reduce the oven to 70C for 1 hour.
Leave in the oven to dry for 2 to 3 hours to dry out.
Put a Pavlova on each plate, add a dollop of cream and slices of fruit and drizzle with passionfruit and sprinkle with shaved coconut.
