Miso Fish with Caramelised Pumpkin and Asian Greens

Lachlan's Main, Series 3, Come Dine with Me Australia.

Serves 5

Ingredients

Miso Fish:

  • 5 x 200g pieces of white fish fillet of uniformed shape and size
  • 2 ½ tablespoons of white Miso paste
  • 3 tsp of sugar
  • 2 tsp of lime juice
  • 2 tsp of peanut oil
  • 6 shallots
  • Sesame seeds

Caramelised Pumpkin:

  • Half a medium sized pumpkin
  • 2 tbsp of brown sugar
  • 1 tbsp of peanut oil
  • 1 tsp of soy sauce
  • ¼ of a cup of water

Asian Greens:

  • 3 bunches of Asian greens
  • 1 garlic clove finely chopped
  • 1 tbsp of sesame oil
  • 1 tsp of grated ginger
  • 1 tsp of grated galangal
  • 1 tsp of soy sauce
  • 1 tsp of teriyaki sauce
  • ½ tsp of Maggi seasoning
  • ½ tsp of fish sauce

Method

Miso Fish:

  1. Place the fish on a baking tray lined with baking paper.
  2. Preheat the grill to high.
  3. Stir the Miso paste, sugar, lime juice and peanut oil together in a small bowl.
  4. Brush the fish with the Miso mixture.
  5. Place under the grill for 5-7 minutes, until the fish is cooked through.
  6. Sprinkle with sesame seeds and shallots and serve.

Caramelised Pumpkin:

  1. Skin pumpkin and dice into medium sized squares.
  2. Place oil in a frypan, add pumpkin, soy sauce and brown sugar.
  3. Add the water as required.

Asian Greens:

  1. Heat oil in a wok.
  2. Combine all ingredients and cook for 2-3 minutes.
