Sicilian Orange Cake served with Orange Sauce, Toasted Almonds, Mandarins and Grand Marnier Ice Cream

Sheila's Dessert, Series 3 Come Dine with Me Australia.

Serves 5

Ingredients

Sicilian Orange Cake:

  • 2 large oranges
  • 6 eggs
  • 8oz almond meal
  • 8 oz sugar
  • 1 tsp of baking powder
  • 2 tbsp of ricotta cheese

Orange Sauce:

  • 120g Butter
  • ½ cup sugar
  • 2 tsp grated orange rind
  • 1/3 cup orange juice concentrate
  • 1 tbsp of Grand Marnier

Grand Marnier Ice Cream:

  • 1L of good quality vanilla ice cream
  • 3 tbsp of Grand Marnier
  • 1 cup of orange juice concentrate

Method

Silican Orange Cake:

  1. Preheat oven to 180 degrees.
  2. Rinse and boil oranges with skin on.
  3. Allow oranges to cool.
  4. Cut in quarters, removing the pips.
  5. Blend until smooth.
  6. Beat eggs and add remaining ingredients before mixing thoroughly.
  7. Line cake tin and pour mixture in.
  8. Bake for 1 hour.

Orange Sauce:

  1. Melt butter over medium heat.
  2. Add sugar until dissolved.
  3. Add rind and juice, mixing well.
  4. Add Grand Marnier and simmer for approximately 2 minutes.

Grand Marnier Ice Cream:

  1. Place ice cream, Grand Marnier and juice concentrate in a bowl and mix well.
  2. Place back in container and freeze until needed.

Notes & Tips

TO SERVE
Place cake wedge, with a few mandarin segments, either tinned or fresh on top of cake, drizzle 2 teaspoons of toasted chopped almonds and orange sauce over cake with a scoop of ice cream.

      I boiled them for 30 minutes & also added chocolate to the recipe very good

    For those in Perth who have asked the health food shop in the Floreat Forum sells Xylitol. For anyone who has tried this recipe, have you used half the amount of xylitol (ie 4 oz) as per directions on packet, or was it 8 oz of xylitol that she used in the cake?

    Hi, the cake looks great. Anyone know if the oranges when cooked and blended had the skin left on? I guess it would add to the flavour but could be a bit bitter?

      Yes, the skin is left on for this kind of cake. Nigella does a similar Chocolate version in her book 'Feast'.

      I have researched other recipes for similar cakes after tasting a lovely one in Melb, and yes you boil them with the skin on.

    I think she said it was from china, I want to know as well. You can buy Stevia in woolworths in the liquid form , as I have a small bottle if I go out for coffee. I'm also from perth. Being searching the net this morning but can't find anything as yet. She had granule sugar did she say it was Stevia? can you remember Janet 167.

      you can buy the stevia tea leaves at local organic markets and online. i boil them for sugar syrups or use the syrup in baking, or to sprinkle over yoghurt or fruit. it's super sweet and has health benefits! it's hard to buy in bulk in the crystalised form. i've seen xylitol available in bulk in various supermarkets or online.

      She actually used Xylitol, which you can buy at your health food shop or from oganics australia online.
