Penne Boscaiola

Ammie's Main, Series 3 Come Dine with Me Australia.

Serves 5

Ingredients

  • 1 – 2 tbsp olive oil
  • 8 – 10 rashers of bacon
  • 3 – 4 green shallots finely chopped
  • 2 – 3 cloves of garlic, crushed
  • 300 – 400g button mushrooms thinly sliced
  • 500 ml thickened cream
  • 500g penne pasta
  • ½ - 1 cup grated cheese
  • Salt and pepper to taste
  • Dash dry white wine

Method

  1. Heat oil in a large frying pan. Slice bacon and cook with onion and garlic, stirring occasionally, for about 5 minutes, or until onions are soft and bacon is lightly browned.
  2. Add mushrooms and cook for a further 5 minutes. Add cream simmer Season to taste.
  3. Meanwhile, cook pasta in a large pan of salted, boiling water, until just tender. Drain.
  4. Once sauce has simmered add cheese to thicken the sauce, always tasting to make sure you have the right amount of all ingredients.
  5. Add pasta to a pan with sauce, and toss until well combined.
  6. Serve with a small side salad.
