Penne Boscaiola

Ammie's Main, Series 3 Come Dine with Me Australia.


  • 1 – 2 tbsp olive oil

  • 8 – 10 rashers of bacon

  • 3 – 4 green shallots finely chopped

  • 2 – 3 cloves of garlic, crushed

  • 300 – 400g button mushrooms thinly sliced

  • 500 ml thickened cream

  • 500g penne pasta

  • ½ - 1 cup grated cheese

  • Salt and pepper to taste

  • Dash dry white wine

    Heat oil in a large frying pan. Slice bacon and cook with onion and garlic, stirring occasionally, for about 5 minutes, or until onions are soft and bacon is lightly browned.

    Add mushrooms and cook for a further 5 minutes. Add cream simmer Season to taste.

  • 3.

    Meanwhile, cook pasta in a large pan of salted, boiling water, until just tender. Drain.

  • 4.

    Once sauce has simmered add cheese to thicken the sauce, always tasting to make sure you have the right amount of all ingredients.

  • 5.

    Add pasta to a pan with sauce, and toss until well combined.

  • 6.

    Serve with a small side salad.
