Roasted Pork Belly with Crackling served with Homemade Apple Sauce and Asian Stir Fry Vegetables in Sweet Soy & Sesame

Shane's Main, Series 3 Come Dine with Me Australia.

Serves 5

Ingredients

  • 2kg Pork Belly (deboned & scored from butcher)
  • Salt to season
  • Splash of olive oil
  • 2 red capsicums
  • 1 yellow capsicum
  • 200g snow peas
  • 1 bunch Broccolini
  • Good dash of sweet and ordinary Soy Sauce
  • Good dash of Hoi Sin
  • Good Dash of Sesame Oil
  • 8 Granny Smith apples
  • Half knob of butter
  • Half amount of brown sugar to butter

Method

The pork:

  1. Preheat oven to 250 degrees.
  2. Rub oil & salt into pork skin.
  3. Place pork on a rack over a baking dish.
  4. For the first 45 minutes roast on high.
  5. Turn oven down to 150 degrees and cook for a further 1hr 15 mins, turning the dish around in the oven every half an hour to get even crackling.
  6. Cover and rest for 5 mins before slicing into strips to serve.

Asian Stir Fry Vegetables in Sweet Soy & Sesame:

  1. Julienne all vegetables.
  2. Heat wok with the sesame oil.
  3. Add stems of broccolini first to soften, then capsicum and all the sauces stir & season to taste.
  4. Cook for 4-5 mins.
  5. Add snow peas 3 mins before serving.

Apple Sauce:

  1. Peel apples cut in eighths.
  2. Add butter to a pan and soften. Then add the sugar on a low heat.
  3. Sit the apples in liquid without the lid on the saucepan.
  4. Cook until soft.
  5. Use hand blender to mix.
  6. Serve on top of pork.
  7. Don’t put apple sauce near vegetables.
