Chocolate Cheesecake

Chocolate Cheesecake

Bromwyn's second dessert, Series 3 Come Dine with Me Australia.

Serves 5

Ingredients

  • 1 cup gluten free triple chocolate biscuits (I used freedom brand)
  • 1/2 cup caster sugar
  • 200g Toblerone milk chocolate
  • 200g extra Toblerone chocolate (optional)
  • 1/2 cup thickened cream
  • 1/4 cup ground hazelnuts
  • 2 x tablespoons cocoa powder (optional)
  • 1 x large plain flake
  • 500g block PHILADELPHIA Cream Cheese, softened
  • 80g butter, melted
  • 1 x punnet of strawberries
  • 1 x 200 gm Lindt 70 % coco chocolate
  • 1/2 cup of chopped peanuts (optional)

Method

  1. Crush/process biscuits until fine crumbs. Add melted butter.
  2. Add crumbs to a round springform cake tin approx 16 cm for a deep cheesecake, 22 cm for a thin cheesecake. Chill.
  3. Melt one lot of toblerone chocolate. I use the microwave and to do this by placing it on 50% heat and stir every 30 seconds until melted.
  4. Process softened cheesecake and sugar together. Add cream and melted chocolate. Add cocoa powder at this stage.
  5. Place mixture onto breadcrumb base and flatten with spoon. Add the flake on top of the cheesecake. Chill in fridge – prefer overnight.
  6. For the strawberries, melt Lindt chocolate. Dip strawberries bums in the chocolate and place on greaseproof paper to set. If adding nuts, dip the strawberries in the nuts at this stage.
  7. Upon serving, melt extra toblerone chocolate. Pour over top of cheesecake to create a sauce. (optional)

I think the base is made from the gluten free triple chocolate biscuits mixed with butter - quite a common cheesecake base - or you can use chocolate ripple biscuits or gingernut biscuits

I think the base is made up from the gluten free triple chocolate biscuits mixed with the butter - quite a common base for cheesecake though any crumbly biscuit will work - I like the chocolate ripple biscuits myself or ginger nut biscuits
