Hot and Sour Shredded Salad


Hot and Sour Shredded Salad

A deliciously fresh Asian salad, to be served alongside Nigella's Asian Braised Shin of Beef.

Serves 6

Ingredients

  • 3 carrots
  • 4 spring onions
  • 1 long red chilli
  • 1 long green chilli
  • 20g/small bunch coriander
  • For the dressing
  • juice of 1 lime
  • 4 x 15ml tablespoons Thai fish sauce
  • 1 teaspoon caster sugar

Method

  1. Peel the carrots, cut into long slices and then julienne them (i.e. cut into matchstick-likestrips).
  2. Trim and halve the spring onions and julienne as well.
  3. De-seed the chillies and cut into juliennes, then finely chop the coriander.
  4. Combine all the julienned vegetables and the chopped coriander in a bowl. In anotherbowl mix the lime juice, fish sauce and caster sugar, and dress the vegetables with this,then top the Asian Braised Shin of Beef with your salad.

Notes & Tips

Although you can pick at this salad straight from the fridge it's advised that you to make it at the last minute, once the sauce for the Asian Braised Shin of Beef above is reduced, and you’re about to plate up.
