I found an almond bread recipe very easy and yum....3 egg whites, 250g almond kernels whole, 1/2 cup caster sugar, 1 cup plain flour. Method: Beat egg white till soft peaks form (use eggs at room temp) add sugar a few tbsp at a time and beat continually until you have a nice thick consistency. Now fold through the sifted flour 1/4 at a time add the almonds after the 1st 1/4...add flour till all is added. Get a greased loaf pan add mixture and bake moderate oven 160c for 30min. Take from oven and cool before wrapping in foil and leave for 2 days. Using a sharp knife cut into thin slices place on baking paper lined biscuit trays bake in a slow 140c oven for 35min or until dry and crisp. I made this today but this is the third time ...I love it.
