Ingredients

  • 2 eggplants
  • 250g haloumi cheese
  • 250g rocket leaves
  • 1 carrot, julienned
  • 1 Spanish onion, finely sliced

Method

  1. Cut eggplants & haloumi across one centimetre thick.
  2. Fry in pan until eggplant becomes slightly transparent & haloumi is lightly browned.
  3. Place eggplant & haloumi on top of rocket top with carrots & Spanish onions.
  4. Sprinkle over balsamic vinegar.
