Chicken Pie


I wanted a chicken Pie when i was pregnant but could not find one i liked, so i tossed around some ingrediants untill I was happy with the result!

Ingredients

  • Ready made puff pastry
  • 500g chicken mince
  • 2 chicken breasts diced into small pieces
  • 2 carrots diced small pieces
  • 2 leeks sliced thin
  • 1 can evaporated light milk
  • 1 cup corn kernals
  • 1 - 2 massell chicken stock cube
  • 1/4 tsp cayenne pepper
  • salt and pepperto taste
  • 2 cloves garlic crushed
  • 2 tbs olive oil

Method

  1. Fry chicken mince, remove and then put through food processor to make the mince smaller and smoother
  2. Fry on low oil, leeks and garlic for 5 min
  3. Add chicken pieces , fry for another 5 minutes.
  4. Add evaporated milk, cooked chicken mince, diced carrots, corn, cayenne, season with salt and pepper and allow to simmer for aprox 10 - 15 min.
  5. Allow mixture to cool slightly.
  6. Line small muffin pan with pastry, fill with warm chicken mix, top with pastry and brush milk on top.
  7. Bake in warm oven aprox 160 for 10 - 15 min untill pastry is golden brown

These can be frozen after cooking!
