Hot Patato Pudding With Stewd Fruit

winter warmer, smooth creamy patato pudding perfect for a dessert after a meal.


  • 6 large potatoes

  • 2 x 250ml cups sugar

  • 12 eggs

  • 1tsp vanilla essence

  • 1 & half tsp almond essence

  • 125g butter

  • 1 litre milk

  • 4 tblsp custard powder

  • 5 - 6 pcs whole stick cinnamon

  • 5 - 6 whole cardomon

  • stewd fruit

  • 250g dried fruit

  • 1 x 250ml cup sugar

  • 1 x 250ml cup water

  • 3 - 4 whole stick cinamon

  • 3 - 4 whole cardomon

  • quater cup apricot jam

    Before starting with the pudding, soak dried fruit in hot water, and preheat oven on 180.

    Peel and cut potatoes into small cubes, and boil till soft. Once cooked, drain and mash potatoe with butter till very smooth then let it cool a bit. add in eggs, essence and sugar then mix till sugar has dissovled. In seperate bowl mix custard powder with a little milk to a runny paste then add to potato mixure. lastly add milk and mix through slowly pour mixure in an oven dish, and place whole cardomon and cinimon on the top and place in the oven to bake for 45 - 50 mins.

    Stewed fruit,

  • 4.

    Place in a suace pan, sugar, water cinamon and cardomon. Bring to a boil then drain the fruit and add to the pan. lastly add jam and ensure that the suryp does not cook sticky.

    Once the pudding is baked place the fruits ontop of the pudding and pour the suryp over as well, and serve hot.


If you dont have dried fruit, you can just put the jam directly ontop without making suryp but it must be put onto the pudding immediately after the pudding comes out of the oven.
