Recipe by Opel Khan from Chefs Christmas 2009
1 dozen rock oysters
1 red chilli, finely chopped
1 lime, juiced
½ lemon, juiced
1 tsp sugar
Freshly cracked black pepper
Good glug of olive oil
1 tsp ground cardomom
Freshly chopped coriander leaves
Combine all the vinaigrette ingredients and season with salt and pepper. Add about a tablespoon of the dressing to each oyster.
Riesling, Semillon and Sparkling are the best wines to pair with Rock oysters with chilli vinaigrette.
