Locarb Vegi Fritter


i have been on a very restrictive diet so i needed to get creative i have made these fritters quite often and everyone loves them

Serves 2 to 4

Ingredients

  • 1/2 cauliflower
  • 1/4 capsicum finely diced
  • 1 onion finely chopped
  • 1 medium carrot grated
  • 1/2 zucchini grated and moisture removed (use paper towel)
  • 1/4 cup chopped flat leaf parsley
  • 1/4 cup plain flour
  • 1 egg white
  • 2 cloves garlic
  • salt and pepper

Method

  1. COOK CAULIFLOWER TILL SOFT DRAIN THEN MASH MAKE SURE TO THEN PLACE CAULIFLOWER BACK ON THE HEAT AND KEEP STIRRING TILL EXCESS MOISTURE IS REMOVED. PLACE ALL INGREDIENTS INTO MIXING BOWL AND COMBINE WELL
  2. USE NONSTICK PAN SPRAY WITH A LITTLE OLIVE OIL , PLACE HEAP DESERT SPOON FULLS OF MIX IN PAN FLATTEN OUT AND COOK TILL GOLDEN BROWN ON BOTH SIDES REMOVE FROM PAN PLACE ON PAPER TOWEL, EAT HOT .

I HAVE THESE WITH A SALAD , OR WITH CUCUMBER AND MINT YOGURT , OR SALSA, OR SWEET CHILLI SAUCE , THEY ALL TASTE GREAT .
