Country leek,potatoe, and chicken soup.

this simple but delicous soup is great on a rainy day or whenever you feel like some REAL food.

Ingredients

Method

  • 1.

    Bring a pot of salted water to the boil and add the chicken drumsticks.

  • 2.

    While the chicken is boiling slice the leek and roughly chop the potatoes.

  • 3.

    Add the leek,potatoes and rosemary to the chicken and boil for about 1/2 an hour to 1 hour until the chicken is a very pale pink colour but not white.

  • 4.

    Fish out the bones,knuckles and skin of the chicken.

  • 5.

    Pour the mixture into a blender and blend until smooth and creamy. Serve with baby spinach leaves or any other herb like chives basil or more rosemary and a bit of pepper.

Notes

For a more complex soup at some more root veges like sweet potatoes and add some pumkin,onion or any other vege you like. Also for a vegetarian option just substitute the chicken for lentels, barley or beans.
