Vegetable Fritters

Indonesians call this fritter 'Bala Bala' and this is one of my family's favorite fritters.

Ingredients

  • 100 grams coarsely grated carrot
  • 100 gram white cabbage, finely sliced
  • 2 stalks of spring onion, thinly sliced
  • 2 eggs, beaten
  • 100 gram of all purpose flour
  • 1 chicken cube, crushed into powder form
  • salt and pepper
  • Cooking oil for deep frying
  • Spice paste:
  • Ingredients: 4 shallots, thinly sliced; 2 cloves of garlic, chopped; ½ teaspoon coriander seed, roasted. grind all the ingredients into a paste using mortar and pestle.

Method

  1. Put the flour into a bowl. Add beaten eggs, beat the mix until smooth
  2. Add the spice paste, mix well
  3. Add the carrot, white cabbage and green onion
  4. Add chicken powder, salt and pepper, stir to combine
  5. Deep fry tablespoons of the mixtures in hot oil
  6. Turn fritters and cook on the other side
  7. Remove from heat and place on paper towel to absorb the excess oil
  8. Serve warm as appetizer or snack
