Pear and Cinnamon Muffins

My most Moist, Moister, Moistest muffins =]


  • 260g Plain flour

  • 3 ts Baking powder

  • 60ml Full cream Milk

  • 60ml Canola oil

  • 100g caster sugar

  • 1 egg

  • 1 ts Vanilla extract

  • 1 ts cinnamon powder

  • 1 Can halved pears, chopped

  • Icing Sugar to dress

  • 6 muffin liners (bought or made)


  • 1.

    Preheat oven to 180C

  • 2.

    Place flour, baking powder, sugar and cinnamon into a mixing bowl

  • 3.

    In another bowl, whip egg, milk, Oil and Vanilla extract

  • 4.

    Make a well in the dry mix bowl and add the wet ingredients

  • 5.

    Mix through, but do not overmix, the mix should look lumpy

  • 6.

    Add the chopped pears and mix through

  • 7.

    Spoon into lined muffin tray, taking care not to get any of the mix on the cases (otherwise they will burn)

  • 8.

    Bake in oven for 30 mins until golden. (this will vary from oven to oven - check at the 20 min mark)

  • 9.

    With a skewer through the center of the muffin, it should come out clean

  • 10.

    Remove and cool and sprinkle with icing sugar


Use any flavoring you wish to the base recipe. One of my all time favorites is Berry and White Chocolate, mmmmm. Bon Appetito!

2 questions - what size can of pears? Can I use greased muffin tins instead of muffin liners?
