Lola's Luscious Lime Pie

Try David's Luscious Lime Pie from week 4 of COME DINE WITH ME AUSTRALIA series 2.

Ingredients

  • 95 grams of Butter
  • 175 grams of Digestive Biscuit
  • 50 grams of Granola Breakfast cereal
  • 1 level tbls grated Lime Zest ( 3 Limes)
  • 150 ml Lime Juice ( 4-5 Large Limes)
  • 3 large Free Range Eggs
  • 1x 400gram can Condensed Milk
  • To finish a little Crème Fraiche & Lime Slices

Method

  1. Pre heat oven to 180 Celsius
  2. You will also need a loose-based flan tin with a diameter of 9 inches (23 cm), 1 inch (2.5 cm) deep, and a solid baking sheet
  3. Place the butter in a pan over the lowest heat and melt
  4. Crush the digestive biscuits into a bowl
  5. Add the melted butter and mix well
  6. Place the butter-crumb mixture in the flan tin and, using your hands, press it down evenly all over the base and up the sides of the tin
  7. Place it on the centre shelf of the oven for 10-12 minutes, or until crisp and golden brown.
  8. While that's happening, combine egg yolks and lime zest in a bowl
  9. Use an electric hand mixer & whisk for approx 2 minutes, or until the egg has thickened
  10. Add the condensed milk and whisk for another 4 minutes
  11. Add the lime juice and give it another quick whisk
  12. Pour the whole mixture onto the baked crust and return it to the oven for another 20 minutes, or until it feels set when you lightly press the centre with your little finger
  13. Remove it from the oven and let cool
  14. Once completely cooled, cover with cling film and chill until needed
  15. Serve cut in slices with crème fraîche and a twist of lime for decoration
