Spinach, Salmon & Herb Roulade with Rocket & Parmesan

Try Deb's Spinach, Salmon & Herb Roulade from Week 3 of COME DINE WITH ME AUSTRALIA series 2.

Ingredients

  • 60gms butter

  • 1/3 cup plain flour

  • 1 cup milk

  • 4 eggs, separated

  • 250gms frozen spinach

  • 450gms tinned red salmon, drained bones removed

  • 4 spring onions

  • 1/2 cup mayonnaise

  • 2 tbs fresh chopped chives

  • 1 tbs fresh chopped dill

  • 1 tsp chopped baby capers

Method

  • 1.

    Cook Spinach in pot until defrosted and all water has evaporated.

  • 2.

    Melt butter in separate large pot, add flour and cook for approx 2 minutes

  • 3.

    Add Milk and stir until smooth and thickened

  • 4.

    Stir in Spinach, remove from heat and stir in yolks.

  • 5.

    Beat egg whites to stiff peaks, gently fold through spinach mixture,

  • 6.

    Pour mixture into greased and paper lined swiss roll tray.

  • 7.

    Bake in hot oven approx 15 mins or until puffed and golden.

  • 8.

    Turn onto tea towel covered cooling rack and remove paper.

  • 9.

    Pick over Salmon, remove bones and dark skin.

  • 10.

    Mix in mayonnaise, herbs, capers and spring onions.

  • 11.

    Spread onto base and roll up, using tea towel as guide.

I can't remember whether this was served warm or cold...anyone remember? If warm, was this done just before people arrived...or warmed up before serving?
