Method

  1. In a bowl combine rocket with olives, onion, cherry tomatoes and toss
  2. Lightly dress with ½ of the lemon juice and 1 tbls olive oil
  3. In a bowl combine goats cheese with mixed herbs, garlic, salt and pepper
  4. Wrap 1 tbls spoon of mixture with 1 strip of yellow and red capsicum in prosciutto and roll up
  5. Lightly fry in remaining olive oil for 5 minutes
  6. Add this to salad, squeeze lemon over the top and serve
