Leftover Roast Mild Curry


This recipe came about by visitors arriving unexpectedly and therefore needing something easy in a hurry that would feed 5/6 people. Also, being older, I had to keep in mind the fact that hot curries and spices don't always agree with the ailments often suffered by an ageing population.

Serves 45

Ingredients

  • Approx 500g leftover roast pork (any roast meat would have done)
  • Leftover roast vegetables
  • 1 tin light and easy evaporated milk
  • 1 1/2 teaspoons curry powder
  • salt and pepper to taste
  • Small packet sultanas
  • 1 1/2 tbls cornflour in 1/4 cup water

Method

  1. Dice meat and cut veges into chunks. Place into saucepan with evaporated milk and sultanas. Heat slowly, adding curry, pepper and salt, stirring occasionally. When mix comes to boil add cornflour dissolved in water. Add a bit at a time until it is the consistancy you want. Some like it thinner than others depending on if using with rice. Serve on a bed of rice.

Notes & Tips

If you don't have any leftover veges, prepare a mix of potato, sweet potato and any other veges you like before you put recipe together. Last time I made it I only had roast pot. left so steamed some sweet pot and beans before I started putting everything else together. If in a hurry, instant rice packets can be used.
