Pistachio, saffron and cardamom kulfi with kiwi fruit and a kiwi coulis

Try Dominic's dessert from week 3 of COME DINE WITH ME AUSTRALIA series 2.

Ingredients

Kiwi Fruit Coulis

Pistachio, Saffron & Cardamom Kulfi

  • 2 x 375 ml cans evaporated milk
  • ¾ cup thickened cream
  • 3 cardamom pods, bruised
  • ¼ tsp saffron threads
  • 1/3 cup caster sugar
  • 1/3 cup shelled pistachios toasted and finely chopped

Method

Kiwi Fruit Coulis

  1. Put kiwi fruit in food processor with icing sugar and blend to a smooth consistency and then sieve.
  2. Add a splash of Midori liqueur.

Pistachio, Saffron & Cardamom Kulfi

  1. Combine all but the sugar, bring to boil then simmer until reduced to 3 cups.
  2. Discard cardamom pods, and strain.
  3. At room temperature add nuts and put in cup shapes and freeze.
  4. Serve with Kiwi fruit and the Coulis.
