Chicken liver crostini

Try Jane's starter from week 2 of COME DINE WITH ME AUSTRALIA series 2.

Ingredients

  • 1 onion, finely chopped
  • 1 bunch parsley, finely chopped
  • 400g mince beef
  • 12 chicken livers, finely chopped
  • 10 anchovy fillets, finely chopped
  • ¼ cup capers, finely chopped
  • 1 tbsp tomato paste
  • 1 bread stick
  • ½ cup water - water can vary, just as long as dish stays moist while cooking

Method

  1. Place onion and parsley in fry pan of hot oil until brown.
  2. Add mince beef and brown.
  3. Once beef is browned add chicken livers, anchovies and capers.
  4. Add tomato paste and water.
  5. Lower heat and cook for 40 minutes, continually mashing with a fork to get the right consistency.
  6. Slice up bread stick, lightly coat with oil and grill.
  7. Spoon liver paste onto bread and serve warm.
