Dark chocolate and orange torte

Try David's dessert from week 2 of COME DINE WITH ME AUSTRALIA series 2.

Ingredients

  • 180g of good dark chocolate
  • 2 tbsp Grand Marnier
  • 150g unsalted butter
  • 150g caster sugar
  • 150 g almond meal
  • 5-egg yolks and whites
  • Zest of 2 oranges
  • double cream
  • orange segments poached in Gran Marnier sugar syrup

Orange Segments

  • 1 Orange
  • 4 tbsp water
  • 2 tbsp caster sugar
  • 4 tbsp Gran Marnier

Method

  1. Pre heat oven to 180 C.
  2. Melt dark chocolate over a double boiler with Grand Marnier.
  3. When melted add unsalted butter and remove from the heat.
  4. Off the heat add caster sugar and almond meal and fold through well.
  5. Add 5-egg yolks and orange zest.
  6. To this fold in 5 egg whites that have been whisked to firm peaks.
  7. Transfer the mixture to a greased and lined pan and bake for 40 minutes.
  8. Remove from oven and rest until cool.
  9. Remove from pan and dust with icing sugar.
  10. 1Serve with double cream and orange segments.

Orange Segments

  1. Combine water and caster sugar in a small saucepan. Heat to dissolve the sugar. Add Gran Marnier to the saucepan taking care not to ignite the alcohol.
  2. Gently simmer the mixture down to half or until it becomes thick and saucy - be careful not to burn it.
  3. At this point ad the segments of orange that have been carefully peeled and had all pith removed.
  4. Turn off the heat and let oranges and sauce sit until ready to serve the cake.

    hey guys i made this for fathers day and it was a hit. i didnt use alcohol as my children ate it. i use orange juice as a substitute and it was delish. look forward to making the adult version for a dinner party. thanks david

    David's recipe for the Chocolate Torte needs more info. Like what size baking tin he used. Also...don't add the alcohol to the chocolate while you're melting - it will harden the chocolate. Bit more detail in the recipe would be useful!
