Sticky date pudding

Try Kyoko's dessert from week 2 of COME DINE WITH ME AUSTRALIA series 2.

Ingredients

  • 220g dried dates
  • 1 cup water
  • 1 tsp bi-carb soda
  • 60g butter
  • ¾ cup sugar
  • 2 eggs
  • 2 cups self raising flour

Toffee Sauce

  • 200ml cream
  • 200g raw sugar
  • 80g butter

Method

  1. Pre heat oven to 190C.
  2. Chop dried dates and cook them in water on low heat until soft.
  3. Stir in bi-carb soda.
  4. In a pot on low heat melt butter.
  5. Add sugar, eggs, flour and combine.
  6. Add the date mixture to this and stir.
  7. Pour the mixture into a greased and lined 20cm cake pan and bake for 40 mins.
  8. Serve warm with warm toffee sauce.

Toffee Sauce

  1. In a pot over low heat combine all ingredients.
  2. Simmer until melted.
