Spicy Spinach


Ingredients

  • 2 nuggets frozen spinach
  • 1 onion, thinly sliced
  • 1 tablespoon cooking oil
  • 1 teaspoon split yellow peas
  • Pinch turmeric powder
  • Pinch madras curry powder
  • 1 stem fresh coriander leaf, finely chopped
  • Dash of lemon/lime juice

Method

  1. Heat cooking oil in wok or saucepan on medium heat Add the sliced onion, split yellow peas and turmeric powder Cook till golden brown and soft Add the frozen spinach, Madras curry powder and stir and mix well and keep the heat on for further few minutes to get the vegetables to blend and absorb the flavours. TIP: Add little bit of water to make a runny consistency and gravy texture Turn off heat, sprinkle with chopped coriander Serve with toasted pita, naan, rice and such Enjoy!
