Minted fruit salad

Ingredients

  • Serves 4
  • Prep time 10 minutes
  • Standing time 10 minutes
  • 250g (1 punnet) straw berries, hulled and sliced (see tip)
  • 2 ruby grapefruit, peeled and segmented
  • 4 thick slices fresh pineapple, cut into chunks
  • 1/4 cup fresh mint leaves
  • Natural low-fat yogurt, to serve

Method

  1. Place strawberries, grapefruit, pineapple and mint leaves in a large bowl. Toss well to combine and set aside for 10 minutes.
  2. Divide fruit among 4 serving plates, drizzle with juices and top with yogurt.

Tips:

Substitute your favourite seasonal fruit.
