Asparagus soldiers

Ingredients

  • Serves 4
  • Prep time 5 minutes
  • Cooking time 6 minutes
  • 1 bunch thick asparagus (see tip)
  • 4 eggs
  • freshly ground pepper, to serve

Method

  1. Snap off tough ends of asparagus. Plunge asparagus into a saucepan of boiling water and cook for 2-4 minutes, until bright green. Drain and place on a paper towel.
  2. Meanwhile soft-boil eggs. Serve asparagus with eggs in cups and season with freshly ground black pepper.

Tips:

White asparagus can also be used.
