Ingredients

  • Serves 1
  • Prep time 5 minutes
  • Cooking time 5 minutes
  • 1 plain wholegrain english muffin, split (see tip)
  • 1 tablespoon salt-reduced tomato puree
  • 4 button mushrooms, thinly sliced
  • 1/4 cup (30g) grated light cheddar

Method

  1. Lightly toast outside crust of muffin. Spread purée on untoasted side. Scatter with mushrooms and sprinkle with grated cheese. Cook under a preheated grill, until cheese has melted and is lightly browned.
