Tavuk Dolma

Serdar Ergene’s stuffed chicken is easy to prepare and absolutely delicious

Ingredients

  • 0.5 bunch spinach

  • 0.5 leek

  • 1 small onion

  • 0.5 bunch dill

  • 2 mushrooms

  • 50 g cheddar cheese

  • 1 chicken breast skin off

  • black pepper

  • cumin

  • salt

  • sweet paprika

  • mixed spice powder

  • clarified butter

  • oil

Method

  • 1.

    In a fry pan heat the oil and add onion, dill and leek and cook through.

  • 2.

    Cut the chicken breast in half and lay flat.

  • 3.

    Bash with a cooking mallet to tenderise.

  • 4.

    Salt the chicken and sprinkle with salt and black pepper.

  • 5.

    Lay mushrooms, spinach, fetta and mozzarella on one half of the breast.

  • 6.

    Fold the breast over and brush with clarified butter on one side only.

  • 7.

    Add the mixed spices and sweet paprika

  • 8.

    Place in the oven for 5-10 minutes.

  • 9.

    Serve with fresh garden salad on a bed of rice
