Swiss Fondue

Ingredients

  • 1 garlic clove
  • 750g swiss-style cheese, grated
  • 2 teaspoons flour
  • 1 ½cups (375ml) dry white wine
  • 1 teaspoon lemon juice
  • 1 tablespoon kirsch
  • ¼ teaspoon ground nutmeg
  • 1 baguette, cut into bite-size cubes

Method

  1. Rub inside of a flameproof saucepan with garlic. Add cheese, flour, wine, lemon juice, kirsch and nutmeg. Cook on very low heat for 5 minutes, stirring in a figure-eight shape, until melted and creamy. Keep fondue hot over a tea light and serve with baguette cubes for dipping.
