Ingredients

  • 500g beef mince
  • ½ cup (35g) fresh breadcrumbs
  • ½ green capsicum, very finely diced
  • ½ cup (100g) rice
  • 1 egg, lightly beaten
  • ½ teaspoon paprika
  • 300g can tomato soup
  • 1 cup (120g) frozen peas
  • Mashed potatoes , to serve

Method

  1. Combine beef, breadcrumbs, capsicum, rice, egg and paprika in a bowl. Season to taste. With wet hands, roll into about 32 balls.
  2. Combine soup and 1 cup water in a heavy pan. Add meatballs, cover and simmer gently for 20 minutes. Stir in peas and cook for another 5 minutes. Serve with mashed potatoes.
