Orange glazed meatloaf

Ingredients

  • 750g beef mince
  • 1 ½ cups (105g) fresh breadcrumbs
  • 1 onion, finely chopped
  • ¼ cup (60ml) orange juice
  • 1 egg
  • 1 tablespoon chopped parsley
  • orange glaze
  • 3 orange slices, halved
  • 2 tablespoons brown sugar
  • 2 tablespoons orange juice
  • 2 teaspoons tomato paste
  • ¼ teaspoon cinnamon
  • ¼ teaspoon ground cardamom

Method

  1. Preheat oven to 180°C or 160°C fan. Grease a 14 x 21cm loaf pan.
  2. Mix together all meatloaf ingredients until combined. Season to taste. Lightly press into prepared pan and bake for 30 minutes.
  3. Arrange orange slices on top of meatloaf. Combine remaining ingredients and spoon over oranges. Bake for another 15 minutes. Rest in pan for 10 minutes before slicing. Serve hot with vegetables or cold with a salad.

    I'm not a meatloaf lover, but I liked this one. It is tweaked it a tiny bit. Increased the orange from 2 to 3 Tbsp. Also I had no tomato paste so used ketchup. I also made a double batch of the glaze, the extra I poured over the meatloaf once it was on the plates. Next time and yes there will be a next time, I will increase the orange juice a bit, and cut down on the cinnamon. Found that it overpowered the cardamon. I think also that along with the juice in the meatloaf, I'll add a bit of zest from the orange.
