Fresh mixed vegetable salad

Nice salad with a blend of vegetables.

Ingredients

  • 1-2 roma tomatoes , diced
  • 1/3 red, green and yellow capsicums, cut in strips or diced
  • ¼ brown onion, thinly sliced (optional)
  • Some olives (with no pits)
  • 1 cucumber, thinly sliced
  • Small cubes of tofu (optional)
  • Some olive oil
  • 1 stem parsley/coriander leaf/mint leaf (which ever is preferred), finely chopped
  • Canned chick peas (or pre-soaked chick peas which is cooked)
  • 1 chilli, slit (optional)

Method

  1. Add all ingredients into a salad bowl and mix well but gently.
  2. Sprinkle some lemon / lime juice and toss.
  3. Take chilli out before serving or if chilli is preferred, add finely chopped chilli instead of pepper.
