Stuffed Squid


Ingredients

  • Extra virgin olive oil
  • 1 spanish onion finely diced
  • 4 garlic cloves chopped
  • Sea salt & freshly ground black pepper
  • 4 small squids cleaned
  • 2 tomatoes skinned and chopped
  • ½ cube italian parsley chopped
  • 1 cup fresh breadcrumbs
  • 4 quartered eggs boiled for 8 mins
  • 1 lemon juiced

Method

  1. Heat olive oil in a fry pan.
  2. Add the onion and garlic and a large pinch salt and sweat 3 minutes.
  3. Cut the squid into rings and add to the pan.
  4. Toss quickly and add the tomato, parsley, salt and pepper. Transfer to a bowl.
  5. Wipe out the pan and add a little more olive oil.
  6. When hot, add the crumbs, salt and pepper and fry until crisp and golden.
  7. Add the eggs, toss and transfer to the bowl with the squid.
  8. Add the lemon juice.
