Stuffed Squid



  • 1.

    Heat olive oil in a fry pan.

  • 2.

    Add the onion and garlic and a large pinch salt and sweat 3 minutes.

  • 3.

    Cut the squid into rings and add to the pan.

  • 4.

    Toss quickly and add the tomato, parsley, salt and pepper. Transfer to a bowl.

  • 5.

    Wipe out the pan and add a little more olive oil.

  • 6.

    When hot, add the crumbs, salt and pepper and fry until crisp and golden.

  • 7.

    Add the eggs, toss and transfer to the bowl with the squid.

  • 8.

    Add the lemon juice.

Very disappointed to find this unstuffed squid recipe! Unless of course it is stuffed in a different way????

Well picked up. I was looking for a stuffed squid recipe too, and didn't realise until I read the 'cut squid into rings' part.
