Chicken with tzatziki


Ingredients

  • 500g greek-style yogurt
  • 1 tablespoon lemon thyme leaves
  • 2 teaspoons paprika
  • 1 teaspoon chilli flakes
  • 1 tablespoon olive oil
  • 6 chicken breast fillets, trimmed
  • 1 small garlic clove, crushed
  • ¼cup chopped mint
  • 2 green onions (shallots), finely chopped
  • rocket, grilled truss tomatoes , to serve

Method

  1. Line a sieve with paper towel. Strain yogurt, stand over sieve for 30 minutes.
  2. Preheat barbecue on high. Combine lemon thyme, paprika, chilli flakes and oil in a large bowl. Season to taste. Add chicken and turn to coat.
  3. Combine yogurt, garlic, mint and green onion in a bowl. Season to taste.
  4. Cook chicken breasts for 4 minutes each side, until browned and cooked through. Serve with tzatziki, rocket and tomatoes.
